Seaweed Salad With Ginger Dressing

A delicious, iron rich salad

1 palm-full dried wakame
1/8 cup bonita flakes (optional, available at Asian Markets)
Big bowl of mesclun or lettuce

Ginger Salad Dressing:

2 Tbs. ginger
1/4 cup mirin
1 cup oil (veg or canola)
1/4 cup rice vinegar (seasoned)
2 Tbs. mustard
1 - 2 Tbs. soy sauce
1/8 - 1/4 cup lemon juice
Rehydrate wakame in cool water for 10 minutes. Toss with greens, bonita flakes and dressing.
