Spiced Rice

A flavorful East Indian rice dish

1 cups basmati rice
1/4 cup corn oil
tsp. mustard seeds
1 cup mixed veggies such as green beans, peas, potatoes, cauliflower, green onion (cut into bite-sized pieces)
tsp. turmeric
Salt
1 tsp. garam masala (mixture is available in Indian shops)
Shredded coconut, optional
Cilantro leaves, chopped

Cook rice in 2 cups boiling water until tender, about 15-20 minutes. Drain any excess water. Cool.

Heat oil in saucepan and add mustard seeds. When seeds start to splutter, add mixed vegetables. Add turmeric and salt to taste. Saut until vegetables are tender. Add garam masala and fry 2-3 minutes. Remove from heat, add cooked rice and mix well. Decorate with coconut and cilantro. Serve hot with plain yogurt. Serves 4-6.
